Meat Injection: A Simple Guide with Recipes

We are building a companion guide with injection recipes and practical information about brines, marinades, umami, glutamates, and how injection changes cooked meat. The first version is available now, and we will continue adding to it.

Troubleshooting

The injector is hard to push:
Use a thinner liquid, strain herbs/spices, and make sure the needle is not clogged.

Liquid leaks around the needle:
Make sure the needle is threaded securely, and the parts are properly seated.

Needle clogs:
Use the larger-opening needle for thicker liquids and strain the marinade before filling.

Plunger feels sticky:
Wash, rinse, dry, and apply a tiny amount of food-safe lubricant if needed.

Cleaning and Storage

Wash before first use and after every use. Disassemble the injector, wash with warm soapy water, rinse thoroughly, and dry completely before storing. Keep the injector and needles in the case when not in use.

Safety

The needles are sharp. Use care when assembling, cleaning, and storing the injector. Keep out of reach of children.
