If you are going to be using a rotisserie you need to consider using a drip pan. Two major reasons:
- To catch the fat dripping and reduce flare-ups.
- To keep a cooler zone directly beneath the meat to help control the heat.
Other benefits include protecting whatever is under the pan from staining or damage, and easy cleanup.
